So, trying to read the output level from a DVD player is fruitless! It will not tell you how hot the signal is electrically mastered. If everything works out correctly both DVDs will sound at the same volume. If one DVD was mixed louder overall than another, the Dialnorm value should be different for each, and the player will play the louder one with its "internal volume knob" turned down.
Dialnorm exists to allow different sound tracks mastered at different volumes to be played at the same level without the user having to adjust a volume control. The value is determined by the DVD authoring house, not by you. Nearly all DVD players, including Apple's built in, have an internal volume control that is set to a level determined by Dialnorm. It is a value of "loudness" that is assigned to the audio track and embedded into the AC3 data stream. The most important problem is that AC3 files use something called "Dialnorm". I do not believe iMovie uses that, but instead uses regular old PCM data. Even when they are there is a device that may circumvent massive volume from the player. First of all, there is no rule that DVDs need to be mastered at super-blaster levels the way CDs typically are. There are a couple of issues at play here.
